We’ve been in Bangkok for three days, and it is dizzying here. During our first evening, wading through alleyways and streets of food stalls with Steve, I kept repeating, “I feel overwhelmed.” It’s been a while since we were in a Big City, and Bangkok is definitely that. It has soaring tall Sky Train subway systems, skyscrapers and giant, shiny square malls home to stores like Hermès and Miu Miu, and countless tiny streets and alleys through which people, cats, scooters, tuk-tuks, and cars race at every hour of day. And we kind of love it.

Recipes from Abroad: Pad Thai
Happy Valentine’s Day (or as we call it, Stella‘s birthday) from Thailand! Due to overwhelming popular request (from five different people including Steve’s mom), I’m posting a photo-illustrated recipe for pad thai from the Smart Cook Thai Cookery School in Chiang Mai, where I took a day-long class and learned to make a few different Thai dishes! If you haven’t prepared a thoughtful gift for your significant other or loved one, a homemade dish of pad thai just may save the day. If you’re celebrating the single life, this’ll be lunch for tomorrow.
Pad Thai
Serves two. Prep time: 20 minutes. Cook time: 5 minutes.
Ingredients (in grams, but approximations provided wherever possible)
100 g narrow rice noodles (a good handful)
100 g (1 cup) your preferred protein (tofu, chicken,whatever, or substitute for another egg)
40 g (1/2 cup) firm (preferable) or soft tofu, small diced
20 g Chinese chives or spring onions (2-3 stalks)
40 g soybean sprouts (a handful)
1 tbsp minced garlic (2 cloves)
3 tbsp cooking oil (anything but olive oil)
3 tbsp oyster sauce (vegetarians substitute mushroom sauce)
1 tbsp fish sauce (vegetarians substitute soy sauce)
1 egg (or 2 in place of other proteins)
2 tsp white sugar)
1/2 cup water
Garnish:
1 handful cilantro
2 lime wedges
1/4 cup crushed peanuts
Paprika or crushed chili

Miscellaneous Travel Tips for the Circumnavacator to Make Your Life More Comfortable and to Reduce the Number of Times You Yell at Your Travel Partner
Tip #247: When circumnavacating, it is a good idea to eat out cheaply, until it’s not. Fast local food, like fried rice or a bowl of noodles containing whatever-you-want-to-guess for less than 1 USD, is only novel and tolerable for a few days when you first arrive in the country. In order to ensure good nutrition, pony up for at least one tasty, fresh, possibly Western-style, and usually more expensive meal a day, and you can eat street food for the other one (or two, if you get up that early). Give your body some of what it’s used to eating; otherwise, you may end up with iron deficiency or other bodily complaints.

Moving out, on, and up!
On Tuesday, we sold and donated the last of our belongings (a six-cup coffee maker, a bamboo mattress pad, an IKEA duvtet ) to some grateful expats in Kaohsiung and moved out of our small studio apartment on Lane 123, Linsen First Road. It was beautiful in that place, even if it had no kitchen — the sliding glass doors to the small balcony faced south, and from dawn to dusk, it needed no more illumination than the sun. And in Kaohsiung, it was always sunny! We stayed for two nights in the same hostel we found when we first came here, and said goodbye to the group of friends we had met through Couchsurfing with a few pitchers of San Miguel. And on a bright, sunny afternoon, boarded the train for Tainan.
It was barely a trip — even taking the local train which stopped every 10 minutes at small, out-of-the-way stations, it was only an hour before we arrived in Tainan, the old southern capital of Taiwan. Tainan’s a whole different universe, and sometime soon, when I have all my photos uploaded and categorized on Flickr, I’ll post some here. But it feels a little like Boston and a little like Japan — ungridded, somewhat disorganized, bereft of real sidewalks; large trees abound everywhere, old temples better preserved than any I’ve seen in China, and overall, just a cozier atmosphere than Kaohsiung. After touring several temples, all within easy walking distance of each other, Steve and I had a late lunch at a local place, him enjoying vegetable noodles with soybean paste (炸酱面) and me chicken curry over rice. We sipped tea from next door and watched trains stop the local traffic.
We’re spending a lot of time with Kate, our friend from Chicago. She was born and grew up in Kaohsiung, and her missionary parents currently work at the Tainan Theological College and Seminary, where we are staying. Being able to learn a little about temples and sights from them is really awesome and humbling. They also make their own bread, scorning Taiwanese standards for toast, and that made for a very satisfying breakfast. Kate and Gene, her husband, and Gene’s parents are visiting, which has been nice — it is good to see friendly, familiar faces from Chicago.
Here’s to several more lazy days around this quaint capital of the south before we head north. Between Steve’s admiring comments about the food and the scenery and my own longings for the tea drinks here, I am starting to suspect that we will miss Taiwan very, very much.

Travel optimization and other lessons from Taiwan.
In the past few days, Steve and I have been looking back at our three and a half month stay in Taiwan, figuring out what has worked out well, and what mistakes we’ve made that we definitely want to avoid on the rest of this trip. Hindsight can be twenty-twenty, but you have to be willing to look in the rearview mirror, assess your decisions dispassionately, and be candid about where you made the wrong calls. Here’s our attempt at doing that!
Know Your Priorities
People travel for different reasons, and one thing we haven’t done a great job of is really prioritizing our reasons. What Steve and I like best about travel is being able to soak up a particular culture, its idiosyncrasies, and hallmarks. We like to grab a meal on the street and talk endlessly about how you order a meal in China and the endlessly amusing subway jingles in Tokyo. Equally fun is people-watching, like comparing the different school uniforms and bags of Taiwanese high school students. We also want to have plenty of time to read books and plan our own projects (for Steve, websites and games, and for Connie, grad school and social enterprises).

A day in the life!
It has officially been more than a month since we moved into our Kaohsiung apartment. Has time really passed so quickly? Is this the fifth time on this blog that I’ve bemoaned the passage of time? I’ll move on then. It’s natural that we’ve also settled into a kind of rhythm with certain themes that come up again and again. Enjoy a picture-heavy post about a day in the life of Steve and Connie in Kaohsiung!
8:00 AM The first battle of the day is to get up. I think everyone is familiar with this battle, but not the long-term kind like we’re waging. We have projects, errands, and things that we’d like to do… but practically nothing that we HAVE to do, unless we have a Skype appointment with our friends or family. On the days when we’ve successfully roused ourselves out of bed before 9 am, we try to take a turn around Central Park.

Have we only been gone for such a short amount of time? Steve and I find it incredible to believe that we only left Chicago on September 7, which was barely three weeks ago. It however, feels like months and months ago that we were last around English-speakers and other flip-flop wearers. (One of the many signs that we are such foreigners.)

Visiting the Japanese baths.
I smell faintly of sulfur, which makes me intensely happy. It is because I’ve fulfilled one of my World Tour bucket list goals already: visit a Japanese onsen. Well, it was technically a sento, which is a public bathhouse. Onsen are baths that are fed by hot springs. Both are intensely awesome, and I’m so glad that I got to visit one in Japan.
Barely functioning.
We’ve been in Tokyo for about 28 hours, give or take a few, and have had a number of exciting adventures and trials already. However, I’m really barely functioning given the amount of sleep I’ve had and the amount of jetlag that I’m dealing with.
Let’s try to detail some of what has happened so far. Lessons learned: Do fly Malaysian Airlines. They offer free wine and beer, which makes any flight, especially trans-pacific ones, go faster. Customs is much more casual here, as compared to China. Or even compared to our border crossing in Vancouver, Canada. Nevertheless, it took us an unexpectedly long time to reach our Couchsurfing host, Ken, by JR Railroad and Tokyo Metro, which are two of the rail networks here. We crashed last night, and this morning, got up with the sun, feeling remarkably fresh after 5 and 1/2 hours of sleep. We set off to Shibuya this morning, where we enjoyed breakfast at McDonald’s and internet at Starbucks, took some pictures of the famous Shibuya Scramble, and then set off on the road to investigate Tokyo.
